1. MEZCAL MASPARILLO

    Agave Guadalajarana (commonly known as masparillo); The process begins with the obtaining of the raw material in the properties surrounding the Huitzila area, Zacatecas, Mexico. Where near oaks and oaks (typical flora of the region) we find this extraordinary agave, which has its development in a natural and organic way, occupying a long period of time for its maturity, approaching 10 years; In this way, it moves to the “Mezcal Tabernero” facilities located at km 3 Huitzila, Teul de González Ortega, Zacatecas, to begin a fairly careful process;

  2. MEZCAL MASPARILLO

    With the raw material (Agave Guadalajarana) in the installation, it is carefully transferred inside the masonry oven, splitting the agave balls with an ax in a traditional way. In this way the steam-based cooking begins, taking approximately 9 hours, thus obtaining a perfect cooking.

  3. MEZCAL MASPARILLO

    Subsequently, a small crushing of the agave is carried out and in this way the grinding begins with the support of an Egyptian mill, which is driven by a beast, seeking the greatest pulp production.

  4. MEZCAL MASPARILLO
    Fermentation in wooden vats

     

    The pulp is transferred to the fermentation vats, where the formulation is made with water, taking approximately 10 days to ferment.

  5. MEZCAL MASPARILLO
    Distillation in copper stills with direct fire

     

    Arriving at the point of perfection during fermentation, the pulp is taken to one of our copper stills, where distillation begins over direct heat, a fairly careful process, taking up to 6 hours to obtain an ordinary product (First product). Likewise, a double distillation is carried out in order to enjoy an excellent “Mezcal Masparillo Artesanal UNIQUE IN ITS VARIETY”.

Elaboration
After 7 long years of care and dedication, Casa Tabernero® achieves the perfect maturation of the Agave Tequilana Weber, the basis for the production of Mezcal Perla Azul®. Transferring our raw material to the plant for processing, where it is carefully cooked in a masonry oven, likewise the juice of the agave is extracted in roller mills. To transfer them to the stainless steel vats for fermentation, following the distillation process in copper stills, to obtain this delightful 100% Tequilana Webe Mezcal.

Elaboration
Through 9 years of agave selection in the properties surrounding the community of Huitzila Zacatecas, Casa Tabernero® achieves the perfect maturation of Agave Guadalajarana base for the elaboration of Mezcal Perla Azul®. Transferring our raw material to the plant for processing, where it is carefully cooked in a masonry oven, likewise juice is extracted from the agave in a roller mill. To transfer them to the stainless steel vats for fermentation, following the distillation process in copper stills, to obtain a delightful 100% Guadalajarana Mezcal.
